Proximate analysis and amino acids of harvest residues from Pleurotus spp.

Harvest residues from Pleurotus pulmonarius and P. columbinus mushrooms
were evaluated to determine their chemical properties with the intent to promote these
as a food source. We found that they contained considerable quantities of protein
ranging from 14.40 to 8.98%. In addition, 8 essential amino acids were detected
including isoleucine, leucine, lysine and methionine, in quantities similar to those
registered by the FAO. Chemical data revealed that isoleucine, valine and methionine
were deficient in harvest residues. Possibilities for food use are discussed
