The States of Jalisco, Mexico, Chiapas, Guanajuato and Michoacan produce
51 .7% of the Mexican agricultural by-products. The straws of benne, rice, saffron,
barley, wheat, and sorghum are produced in thirty States of Mexico, reaching about
11,342,758 tons, which could be used to produce around 10,718,907 tons of fresh
fruiting bodies of Pleurotus ostreatus or 145,527 tons of Volvariella bakeri. About
690,249 tons of coffee pulp are produced yearly in Mexico and one could obtain up
to 110,370 tons of P. ostreatus. A potential production of 6,281,354 tons of P.
ostreatus could be produced from 12,798,194 tons of sugarcane bagasse. 147,000
tons of henequen bagasse and 26,000 tons of tequila bagasse were produced in 1986,
which could be used to produce about 19,110 tons and 3380 tons of P. ostreatus,
respectively. Furthermore, the main forest residues are from oak (Z42,203 tons),
tropical common woods (360,614 tons), and pine (4,408,103 tons) , which can be good
substrates to produce about 84,771 tons of shii-take, 133,427 tons of Auricularia
fuscosuccinea, and 1,102,025 tons of Flammulina velutipes, respectively.
