Abstract

This paper deals with the identification of two species o£ Saccharomyces, S.
rerevisiae and S. uvanun, isolated from two different samples o( tesgiiino (almholic
bewrag;e produced by lcrmentation of mai1e kernels) from the State o[ Jalisco, ;\lexica. The constancy in tesgi.iino ol the first mentioned species
is commented, and the second species is reported for the first time in this
fermented beverage. Nitrogen fixation, as shown by the acetylene reduction
test, was registered in a sample of tesgi.iino from Guadalajara. In the other
sample studied. from I.a Harca, the acetylene reduniou test was negati,·e.
