Abstract

It is described Sacclunomyces rcr(~ViSuu: isolated lrom "tesgiiino", alcoltolic beverage produced by lennentation of sprouted maize kerneb, which is consumed by indigenous groups of northwestern i\lexico, as the Tarallllmar and Tepehuan. This is the first microorganism described from the microflora of such a beverage. Some ethnological aspects of tesgi.iino are comented as well as the industrial usage of similar beverages of Bantu origin in South Africa.
